Join Chef Linda Soper-Kolton for a taste of a delicious plant-based recipe from her new cookbook, Compassionate Cuisine: 125 Plant-Based Recipes from Our Vegan Kitchen. Interwoven with the recipes, the book tells the story of one of the country's oldest animal sanctuaries, the Catskill Animal Sanctuary, through its food. Their award-winning vegan culinary program is designed to show how easy and delicious it is to cook vegeterian.
